Almond Pulp Recipes
Do you hate throwing away the pulp left over from making almond milk? So do I! I make at least one batch of almond milk a week, using relatively expensive organic nuts. I can't bear to throw out the nutritious (and pricey) leftovers. This leaves me with a fair amount of pulp to use up. Here are some recipes that I have come up with.
Almond Pulp Cookies
These yummy cookies
are only as sweet as you want to make them and are grain and gluten free. For a dairy free cookie, substitute coconut oil for butter. Feel free to add grated coconut or minced dates for variety.
Approximately 1 cup almond pulp
2 eggs, beaten
Sugar or other
sweetener to taste (at least 3 tbsp)
3 tbsp butter, very
soft or melted
Orange zest to taste
(approximately 2 tsp)
Cinnamon to taste
Nutmeg to taste
A few pinches of
salt
Dates, roughly
chopped
Powdered sugar for
dusting (optional)
Preheat oven to 350F degrees. Mix all ingredients except dates and powdered sugar.
Form cookies from approximately 1 heaping tablespoon of "dough". Form into balls then press gently to flatten into small, 1/2-inch-thick discs. Use fingers to shape the edges. Gently press a piece of date into the center of each cookie.
Bake for approximately 30 minutes or until cookies are slightly brown and chewy. Cool on the cookie sheet. Dust with powdered sugar if desired.
Almond-Brown Rice-Asparagus Casserole
This cheesy,
comforting dish is great on a rainy evening. It is also a gluten free recipe.
3 cups cooked brown
rice
1 cup almond pulp
1 bunch asparagus,
in bite-sized pieces, slightly steamed or blanched
2 cups sliced
mushrooms, cooked in butter
1 cup shredded
cheese
4 tbsp melted butter
Thyme or Herbes
d'Provence to taste
Salt & pepper to
taste
Enough chicken broth
to moisten
Grated Parmesan
cheese
Preheat oven to 350F degrees. Butter a large casserole dish. Mix all ingredients except the Parmesan. The mix should be fairly moist but not swimming in broth. Place mix in casserole dish. Sprinkle generously with Parmesan. Cover. Bake approximately 35 minutes.
Almond Pulp Hot Cereal
1/2 cup steel-cut
oats or other porridge
Pinch of salt
Milk, almond milk or water
1 cup almond pulp
Cinnamon and/or
nutmeg to taste
Honey to taste
Raisins or minced
dates, optional
Cook oats or other hot cereal in milk according to package directions. Add almond pulp and optional raisins or dates about 15 minutes before cereal is cooked through. Add enough milk to achieve desired consistency, and continue cooking through. Toward the end of cooking time, add spices. Remove from heat and add honey to taste.
